Abbey of Hautvillers
In 1668, a young Benedictine monk Dom Pierre Pérignon was appointed procurator at the Abbey of Hautvillers, overlooking Champagne. His ambition was to create the “best wine in the world" to serve his community and God’s glory. Dom Pierre Pérignon’s creative legacy is a continuous living ambition that powerfully expresses itself today in Dom Pérignon champagnes.
Dom Pérignon’s vision strives towards harmony as a source of emotion. Harmony in which its aesthetic and sensory values are played out: precision, intensity, touch, minerality, complexity, completeness, a way of embracing and grasping each note. Dom Pérignon can only be produced from the harvest of a single year. This commitment is absolute. To orchestrate its vintages, Dom Pérignon has the widest access to grapes selected from all 17 Grands Crus of Champagne and the legendary Hautvillers Premier Cru. Each Dom Pérignon Vintage is a singular creation that bears witness to each year, whatever the challenge may be, even if it is accepting not to declare the vintage. Dom Pérignon Vintage is revealed after at least eight years of elaboration in the cellars, while Plénitude Deuxième, Dom Pérignon P2, is the result of at least sixteen years of elaboration in the cellars, and Dom Pérignon Rosé is the bold expression of the Pinot Noir fruit, as it comes to life after ten years of maturation on the lees in the cellars.
